  • “Building” a tray bird feeder. Not so much building as just painting and hanging an old Melissa & Doug wooden box (thanks for the idea, Katie Fox!) Hoping this will attract the birds and their copious droppings to the back yard vs. every. single. square. inch. of our van.

Enjoying

  • The feeling of cool squishy finger paints with the Little Ladies and watching the powerful effects of THREE jellybeans on an 18 month old. Wowzer.   

Oh ya, and I’m pregnant.

Week Six in our Move to Florida Countdown. I feel like Michael ‘Squints’ Palledorous at the pool (Sandlot…if you didn’t get the reference, please go watch it so that we can still be friends). This move is Wendy Peffercorn, taunting me with her “oil and lotion” (seriously, go watch the movie). I’m not quite ready to jump awkwardly off the diving board yet, but I’m wiping off my foggy glasses and making my way to the ladder. It’s coming. The Thing we’ve been talking about for months is inching closer to reality. 

A bit dramatic for a moving analogy? Perhaps. But, you get what you get here.

What’s New This Week 3.11.13

Another week is here! Holy moly. We’re starting Week Seven of our moving back to FL countdown! It’s already a blur and a joy and a sadness and a hope-filled adventure.

Here’s what’s new with us. What about you?

  • Carrot, Sweet Potato and Pumpkin Muffins (I’ll add some banana and sub maple syrup or honey for the brown sugar)
  • It’s Just Good Chili
    • 1 lb ground beef (I sometimes sub cooked lentils for half of this)
    • 1 med onion, chopped (1/2 cu)
    • 2 cloves minced garlic (or equivalent of garlic powder…to taste, really)
    • 2 cans diced tomatoes, undrained
    • 1 can tomato paste (and one can water to make “sauce”)
    • 2 tbsp chili powder
    • 1 1/4 tsp ground cumin
    • 1 tsp salt (or to taste)
    • 3/4 tsp pepper
    • 4-5 cups cooked beans (more if I want to stretch this meal) or 2 cans kidney beans, drained
      • Cook beef, onion and garlic over med heat until browned; drain.
      • Stir in remaining ingredients except beans. Heat to boiling; reduce heat. Cover and simmer 1 hour, stirring occasionally (I never let it cook that long…I’m just usually in a rush to feed people)
      • Stir in beans. Heat to boiling; reduce heat. Simmer uncovered for 10 min, storing occasionally, until desire thickness.
  • Fruit Leather
  • Breakfast Ice Cream or The Only Way I’ll Eat a Banana
  • Strawberry Kefir Pancakes (kind of made this one up on the fly for the Pink Ladies, Teagan and Kylie, the other day)
    • 1 large egg
    • 1 cup white whole wheat flour (or all purpose gluten-free)
    • 3/4 cup strawberry kefir (blend your kefir with fresh or frozen strawberries–I used about 5 strawberries for each cup of kefir)
    • 1 tablespoon maple syrup or honey
    • 2 tablespoons coconut oil (melted) or olive oil
    • 3 tsp baking powder
    • 1/2 tsp salt
      • Yields 4-6 4″ pancakes

Creating

  • Recovering our (landlord’s!) dining chairs. Borrowed antiques and toddlers don’t mix!

Doing

  • Purging for the move and prepping my merchandise for the Mama Cents consignment sale this month!

Enjoying

  • Singing. By myself, with others, anywhere, anytime. It’s hard to be angry or stressed and sing at the same time! Ok, well, unless you’re in an angry band or have strep throat.

  • Finally got around to organizing all of my crafting/sewing/painting supplies into my trusty trunk. It only took me a year! Let’s hear it for slow and steady! (or slow and “oh, hey, what’s that over there?”)

  • Making a somewhat intimidating To Do List for our upcoming move! Ah! Teagan’s probably old enough to drive now, right? I mean, she can almost reach the pedals if she stretches really hard.

  • Feeling the sun and breeze on my neck while I hang the clothes of precious people out to dry; then sitting back and watching them dance in the wind while Little Ones play.

What’s New This Week 12.11.12 (or That Was The Longest Nap…Like, Ever)

Hi, there. I’m alive! A delightful combination of sleep deprivation, a full calendar and just downright forgetfulness have kept me far from Blog Land. Whatever. It’s almost Christmas and all is well! It’s good to see you again!

  • Family “Inspiration Board” (upcycling a HUGE message board from the dog groomer’s down the street…pics to come)
  • Advent countdown chain: a simple paper chain counting down the days with a reading from the Jesus Storybook Bible and an activity for that day or evening (Sunday night we decorated our tiny tree, last night we made Apple Crisp, and today we’re making a list of gifts our girls will give to some sweet foster kids and families in our town…make your own fun!)
